Bibb Lettuce Salad with Caper Dressing

Ingredients

  • 2 small heads bibb lettuce
  • 4 radishes, sliced
  • 1/4 cucumber, sliced

Dressing

  • 4 tablespoons capers
  • 2 tablespoons fresh dill or 2 teaspoons dried
  • 1/4 cup parsley leaves
  • 1 small shallot, chopped
  • 3 tablespoons red wine vinegar
  • salt and pepper
  • 1/3 cup olive oil

Directions

Place each half head of lettuce on individual plates cut side down so the lettuce forms a mound on the plate. Arrange the radishes and cucumber slices around each lettuce mound. Blend capers, dill, parsely, shallot, vinegar, salt and pepper in a blender, then stream in olive oil. Spoon dressing evenly over the salad.

Ingredients

  • ¼ cup olive oil
  • ½ t worcestershire sauce
  • ½ t mustard powder
  • 4 anchovies, chopped
  • 2 cloves garlic/black pepper
  • 1 lemon
  • 1 head romaine
  • Homemade croutons

Directions

Croutons: Bread, butter, garlic salt. Bake 350 degrees 7 minutes/side. Add parmesan cheese.

  • Bed of lettuce
  • Peas
  • Sliced hard-boiled egg
  • Cubed/ chopped meat
  • Broccoli
  • Carrots
  • Etc...

Columbia's 1905 Salad

Columbia's 1905 Salad

Ingredients

  • ½ head iceberg lettuce, cut into chunks
  • 2 ripe tomatoes, cut into eighths
  • 3 ounces Swiss cheese, cut into julienne strips
  • 12 large shrimp, shelled, deveined, cooked and cut in half lengthwise
  • ½ cup pitted Spanish olives
  • 2 teaspoons grated Romano cheese

Dressing

  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano (or 2 teaspoons fresh oregano)
  • 1 teaspoon Worcestershire sauce
  • 1 egg yolk
  • ½ cup Spanish olive oil
  • ⅛ cup white wine vinegar
  • Juice of 1 lemon (optional, but in our family NOT optional)
  • Salt and pepper to taste

Directions

Toss together all salad ingredients except Romano cheese.

To make dressing, combine garlic, oregano, Worcestershire sauce, and egg yolk. Beat until smooth with a wire whisk. Add oil gradually, beating to form an emulsion. Stir in vinegar and lemon juice and season with salt and pepper. Add dressing to salad and toss well. Garnish with Romano cheese.

French Dressing

Ingredients

  • ¼ cup oil
  • 3 T ketchup
  • 2 T sugar
  • 1 ½ T vinegar
  • ¼ small onion
  • 1 T lemon
  • 1 clove garlic
  • ½ t paprika
  • ⅛ t salt
  • Bleu Cheese

Directions

In a food processor or blender, mix all the ingredients except the bleu cheese. Crumble the blue cheese in. Dress your salad.
